Pink Crepe Pancakes
My kids will eat these for breakfast, lunch or dinner, and they are so good, they will even eat them plain! Here's the recipe, since I have made them 3 times this week.
1 1/2 cups flour
1 Tablespoon baking powder
1 Tablespoon granulated sugar
1/4 teaspoon salt
Mix dry ingredients together
2 cups milk
1/4 cup butter
several drops of red food coloring
Heat the milk and butter together until the butter is melted
3 eggs, separated
Mix the yolks into the heated milk and butter, then use an electric mixer to mix this with the flour ingredients.
Rinse off the beaters and beat the whites until almost stiff. Gently fold them into the batter. Heat a skillet and use butter in the pan, not oil! Butter makes all the difference in taste!
Make small silver dollar size or larger, your preference. My kids like them small. Butter the skillet in between each batch, just a small amount, to keep the pancakes from sticking. These taste like the lightest crepes and are always a huge hit when family and friends come over. They are a little more work than other recipes, but they are always worth it. Pink Grapefruit & Avocado Salad
3 ripe avocados
3 pink grapefruit
20 new potatoes
3 tablespoons olive oil
2 tablespoons lemon juice
1/2 teaspoon dried mustard
a few drops of soy sauce
a few drops of worcestershire sauce
1 clove crushed garlic
1/2 tablespoon mayonnaise
dash of salt and fine black pepper
Boil the potatoes and leave the skins on. Drain and allow them to cool enough to handle. Once they have cooled, dice the potatoes. Peel and chop the avocados. Cut the grapefruit pieces into halves. Mix together the remaining ingredients to make a dressing. Generously coat the grapefruit, avocados and potatoes with dressing. Cover and refrigerate 3 hours prior to serving.

Pink Almond Cookies
2 cups sugar
3 eggs
1 cup butter
2 teaspoons almond extract
4 cups flour
1 teaspoon baking powder
1/4 teaspoon cream of tartar
1/2 teaspoon salt
Glaze
1 cup powdered sugar
1/2 teaspoon almond extract
1 1/2 tablespoons half and half
Cream butter & sugar, adding eggs, one at a time. Add the rest of the cookie ingredients. Add a few drops of red food coloring to the dough, mixing thoroughly. Chill the dough, then roll into 1" balls, and place them on a greased cookie sheet. Flatten balls slightly, and bake for 14 minutes in a 350 degree oven. Mix glaze ingredients together, and pour over slightly warm cookies.

Pink Grapefruit Delight
Pink Grapefruits
whipped cream
sugar or splenda
coconut rum
chocolate shavings
Slice grapfruit in half, and use a grapefruit knife to loosen each piece inside. Set both halves face up on a cookie sheet. Pour 2 teaspoons of rum onto each half, then sprinke with sugar or splenda. Allow to sit about 10 minutes. Bake in the oven at 375 degrees for 15 minutes. Allow to cool slightly, then top with whipped cream and chocolate shavings.
